Ingredients

  • 4 boneless skinless chicken breasts
  • 2 lemons zested and juiced
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

Prepare the Marinade:

  • In a bowl, combine the lemon zest, lemon juice, minced garlic, chopped parsley, dried oregano, dried thyme, salt, and pepper to create the marinade.

Marinate the Chicken:

  • Place the chicken breasts in a zip-top bag or a shallow dish and pour the marinade over them.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, or ideally 1-2 hours, to let the flavors meld.

Preheat the Grill:

  • Preheat your grill to medium-high heat (about 375-400°F or 190-200°C). Make sure to clean and oil the grates to prevent sticking.
  • Remove the chicken from the marinade and let any excess drip off.
  • Grill the chicken breasts for about 6-8 minutes per side or until they are cooked through and have nice grill marks. The internal temperature should reach 165°F (74°C).
