Thank you for taking the time to visit Diabetic Plate as a resource for your diabetic meals. My name is Tim Lunsford, I am 38 years old and a type 2 diabetic. I was diagnosed as a type 2 diabetic a little over 12 years ago. It was really hard for me to find a healthy way of eating when I was diagnosed, there was no diabetic nutrition education provided which made it harder.

I was struggling. After over 20 years of my life I was eating anything and everything under the sun that tasted good and now I had to quit cold turkey and cut out about 80% of the comfort foods that I was used to eating. I will admit, it was hard and I caved and gave up trying to eat healthy and reverted back to my usual eating habits. It never really dawned on me the types of issues this would cause later in life.

Over the years, I have suffered three pancreatitis attacks (which mind you are anything but pleasant). It was this last attack that doctors finally looked deep into what was causing these attacks. Low and behold, hypertriglyceridemia. My triglyceride levels were creeping their way into the 2000’s. Then came the reality check. High triglycerides are a contributing factor to stroke, heart failure, hardening of the arteries and much more cardiac issues.

I will admit, this scared the crap out of me. I knew at this point I needed to make a change or else I was not going to be around much longer. Having the high triglycerides as well as an A1C of 11.2 were not the making of a diabetic poster child. So I researched and started creating recipes that were low carb, low fat and diabetic friendly. I also wanted to share my journey and help others that may be struggling.

This is how Diabetic Plate came to be born. A place where struggling diabetics can come to find meals that are super easy, healthy and will help manage your sugar levels. I am in no way a nutritionist so please do your due diligence when cooking these meals.

My Mission

I have made it my mission to help those who are also struggling. Along with this site, I have also put together a few different recipe books based on what I believe are healthy alternatives to desserts, dinners, snacks and other items.
